Homemade Ice Cream Cake

In our house, we are ALL about the ice cream cakes! We especially love ice cream pies from our local ice cream shop. Of course I had to try to top it with a homemade ice cream cake!

For my husbands birthday, I decided I wanted to make a homemade ice cream cake instead of buy one – he was a little nervous about the idea because of his LOVE for the ice cream cake we normally get…but let me tell you – this ice cream cake turned out SO good he said he doesn’t think he could ever go back to the store cake again!

I’m not over here whipping up homemade ice cream, so it’s a very simple recipe. The part that makes this cake so good is actually the crust! 

Instead of a typical crunchy Oreo crust, I used my recipe from my Oreo truffles for the crust and it was seriously dangerously good. Check out my full blog post on the Oreo truffles here!

Homemade Ice Cream Cake vs Pie:

I made this a couple different ways. The first time I made this, I made it in cake form, but the second time I made it in pie form. If you ask me, the pie form was much better! 

I’m going to include instructions for both below, don’t worry! 

The main difference was that the amazing crust went all the way up the side in the pie pan, whereas for the cake it was only on the bottom.

Homemade Ice Cream Cake Ingredients:

  • Oreos
  • Cream cheese
  • Ice cream sandwiches (omit the ice cream sandwiches for the pie version)
  • Ice cream (I used cookies and cream)

Making the Ice Cream Cake:

Let’s start by talking crust…

I used the same recipe that I used for my Oreo truffles, check out that full post here!

You’ll start by crushing a pack of Oreos. You can do this in a food processor or place the Oreos in a gallon size resealable bag and crush with a rolling pin (or a bottle of wine if you’re like me and don’t have a rolling pin ha). 

Place the crushed Oreos in a bowl with a block of cream cheese and mix them together until they are completely combined.

Use a 10 inch spring form pan and press the crust along the bottom and make it as even as possible.

Then you’ll use the ice cream sandwiches to create a border around the side. I cut them into 4 pieces – once long ways down the middle and then across the middle. I had to do a few at a time and leave the rest in the freezer because they were softening too quickly.

From there you’ll add your ice cream and spread it evenly throughout! We used cookies and cream, but feel free to replace with your favorite flavor. I found that about two quarts filled the 10 inch pan perfectly.

Finally just crush some extra Oreos and sprinkle on top of the cake!

Making an Ice Cream Pie:

Making an ice cream pie is even easier!

Use 9 inch pie pans and cover the bottom as well as the sides with the crust. You can completely omit the ice cream sandwiches for the pie!

For the pie you’ll only need one quart of ice cream since the pan is not as deep as a spring form pan.

You can finish by sprinkling crushed Oreos on top again, and VOILA! You’ve successfully made an ice cream pie! 

Homemade Ice Cream Cake

This incredibly easy and delicious homemade ice cream cake will not disappoint at your next event! The crust is what MAKES this cake, it’s smooth and rich and is the perfect cookie pair to the ice cream center of the cake!

Ingredients

  • 1 package (1 pound 4 oz) Oreo Cookies

  • 1 block (8 oz) Cream Cheese, softened

  • 8-10 ice cream sandwiches

  • 2 quarts ice cream (I used cookies and cream but feel free to use the flavor of your choice)
    10-15 additional Oreo Cookies for topping

Directions

  • Crush Oreo cookies in a resealable bag using a rolling pin. You can also crush them in a food processor.
  • Add cookie crumbs and softened cream cheese to a bowl.
  • Stir the cream cheese and crumbs together until well combined.
  • In a 10″ spring form pan, press the Oreo and cream cheese mixture to evenly cover the bottom to form the crust.
  • Take a couple ice cream sandwiches out of the freezer at a time, they melt quickly so you’ll want to leave the rest in the freezer. Cut them once long ways and once short ways to get four pieces out of each sandwich.
  • Take the ice cream sandwiches and place them around the outside edge of the spring form pan.
  • Add your ice cream to the middle of the ice cream sandwiches. You’ll want it somewhat softened so you can spread it evenly.
  • Crush the remaining Oreos and sprinkle them over the top of the cake.

Notes

  • To make an ice cream pie: Use a 9″ pie pan and cover the bottom as well as the sides with the crust. You will not need ice cream sandwiches for the pie. Only one quart of ice cream is needed for the pie, but otherwise follow the same instructions as the cake.
