Thick & Chewy Sugar Cookies


  • 1 cup brown butter
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cardamom


First make your brown butter by melting butter in a saucepan over medium heat. Once the butter turns to a golden color remove from heat and place in a separate bowl. Place bowl in freezer and allow it to solidify.

Preheat oven to 350 degrees. Using an electric mixer beat together brown butter, sugar and vanilla until light and fluffy. Add egg and continue mixing. Add flour, baking powder and cardamom and mix on low speed until turns into a dough. Scoop onto a lined baking dish with parchment paper and press down gently with your fingers to flatten out cookie. Optional but sprinkle with coarse sugar or sprinkles for a crunch. Bake for 10 minutes and enjoy!
