Ingredients
dough
- 2 and 1/4 teaspoons (1 standard package) instant yeast
- 1 cup milk
- 1 tablespoon sugar
- 1 egg, room temp
- 1/2 stick salted butter, melted
- 1/2 cup canned pumpkin
- 3 cups all-purpose flour
- 1 tablespoon pumpkin pie spice
filling
- 1/2 stick salted butter, softened
- 1 tablespoon pumpkin pie spice
- 1 teaspoon cinnamon
- 2/3 cup brown sugar
frosting
- 3 tablespoons butter, softened
- 4 ounces cream cheese, softened
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Leave out egg for at least 30 minutes to come to room temp.
- Using a microwave safe bowl, heat up milk for 35 seconds in the microwave. It should be warm to the touch but not burn your finger. Transfer to bowl of stand mixer and add sugar and yeast on top giving it a swish with your fingers. Next add egg, melted butter and pumpkin and stir until combined either using a spatula or whisk.
- Add flour and pumpkin spice on top and place dough hook attachment onto kitchen aid starting on low speed so flour doesn’t fly out. Once flour is combined, knead dough for 5 minutes on medium speed.
- Shape dough into a circle and place into a greased bowl and cover with kitchen towel for 1 hour or until the dough doubles in size. At this point I leave my butter on the counter for my filling to soften so it’s ready to use once the dough has risen.
- Once dough is ready roll out into a large rectangle onto a floured surface. Using an off-set spatula spread butter all over dough leaving empty space around the edges. In a small bowl whisk brown sugar and spices and then sprinkle mixture on top of butter so it is evenly covered. Roll it up tightly and using a sharp knife cut into 9-11 pieces.
- Place rolls onto a greased baking dish, leaving space between each one. Cover with kitchen towel to rise for second proof for 30 minutes. The rolls should double in size.
- Preheat oven to 350 and bake for 20-22 minutes. Let rolls cool for about 20 minutes before frosting.
- Now make your frosting. Using the paddle attachment mix butter, cream cheese and vanilla until combined. Slowly add powdered sugar. Frost rolls. Enjoy!
