On this day one year ago my dad passed away. It has been anything but easy. It has been a very lonely, sad and at times crushing experience. Sure, I have days where I am smiling and laughing and it seems like all is good but the feeling of grief is always there starring at you in the corner of the room. Some days feel like I’m just crossing it off the calendar and merely just existing in a frozen time. It really does not even feel like a year has gone by and it’s hard to imagine more years without him being apart of my life.
Today I ate rocky road ice cream all before 10:30 in the morning and it’s really funny how the taste of it brought me right back to some of my favorite memories with my dad. If you knew him, you know he loved ice cream. In fact. one of his slogans was “love you more than ice cream” and I know for him that was realllll love. I wanted to share this recipe in honor of my dad because while he loved ALL ice cream flavors his favorite was rocky road.
I wish I could share this with him today, because I know he would flip out over how insanely good it is, instead I am sharing it with you and I hope you can share it with someone you love.

2 cups heavy whipping cream
1 can sweetened condensed milk
1 tsp pure vanilla extract
½ tsp salt
1/2 cup unsweetened cocoa powder
1/2 cup chopped walnuts
1 cup semi-sweet chocolate chips
1/2-1 cup mini marshmallows
- In a large bowl with a hand mixer or Kitchen Aid with the whisk attachment beat the heavy whipping cream on medium for 5 minutes. You will know it is done when peaks have begun to form. Do not over beat or the cream will turn into liquid.
- In a separate large bowl mix condensed milk, vanilla salt and cocoa powder together.
- Add half of the chocolate condensed milk mixture to the heavy whipping cream and slowly fold in with a spatula. Add the remainder of the condensed milk and the toppings and do the same.
- Place in freezer overnight or at least 6 hours before consuming.
