Brookie (Brownie + Cookie)

Stop me right now if you disagree but if you mix a brownie and a cookie together you’re bound to create the ultimate dessert ever… right? Chewy, gooey and chocolatey this might be my all-time favorite dessert.

I mean the “brookie” seriously gives you the best of both worlds and it’s literally perfect for any occasion because why decide between having a cookie OR a brownie when you can have both? Brownie and cookie lovers all over can unite because this is one treat you can not pass up.

Perfect to surprise your friend for their birthday. Perfect to make for your mom when she’s having a hard week. Perfect to bring as the showstopper dessert to your Friendsgiving. The list goes on…

The best part about this recipe is all you need is a square 8×8 baking pan, whisk and spatula. There’s no electric mixer required and you can make these on a whim because no room temperature ingredients needed either.

Brownie Layer

  • 5 tablespoons salted butter, melted
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 teaspoon baking powder
  • 2 tablespoons almond milk or regular milk

Chocolate Chip Cookie Layer

  • 8 tablespoons salted butter, softened
  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1 cup semi-sweet chocolate chips


  1. Grease and line a square 8×8 baking pan with parchment paper. Preheat oven to 375 degrees.
  2. Brownie Layer. In a saucepan over medium-low heat melt butter and chocolate together by continuously whisking. Remove from heat and add sugar and egg. Stir until combined. Add flour, cocoa and baking powder. Once dry ingredients are mixed in add milk and stir again until smooth.
  3. Cookie Layer. Microwave butter for 30 seconds. In a large bowl whisk together butter and sugars until combined. Add egg and vanilla. Once mixture is smooth and all ingredients are combined add flour and baking powder. Fold in chocolate chips with spatula.
  4. Spoon brownie batter into prepared baking pan first. Smooth out to edges. Scoop cookie dough on top of brownie layer with a cookie scooper. Bake in oven for 35-40 minutes or until a toothpick comes out the center clean. If your oven is hotter you may need to lower temperature to 350.
